I am a hot chocolate junkie, and when I saw this recipe in Better Homes and Gardens, I knew I had to give it a try. Yesterday and the day before, we were snowed in and I ran out of milk! Thankfully I had powdered milk on hand and it worked harmoniously for this recipe. It was so silky and creamy- my husband who doesn't share my affinity for hot chocolate- said it was so good, it could be a meal! Best hot chocolate I've ever had, that's for sure!
Coconut Tres Leches Hot Chocolate
Ingredients:
3 c. fat-free milk
1 14 oz can unsweetened coconut milk
1/2 14 oz can sweetened condensed milk (2/3 c.)
2 Tbsp. unsweetened cocoa powder
1/2 tsp vanilla
Combine all milks and bring to simmer over medium-low heat. Whisk in cocoa powder until well combined. Remove from heat, stir in vanilla and serve with toppings of choice.

That sounds heavenly! I imagine it tasting a but like drinking a Mounds bar. You would just need some almonds to go with it. It also sounds like it could be great frozen. =)
